CLEAN Coconut & Chocolate Mug Cake

Tonight I have truly outdone myself…..I cannot BELIEVE that something this clean could taste THIS GOOD!!!! Go make this. NOW.

For 1 mug cake:
2 tbsp coconut flour
1 tbsp high quality cocoa powder (I use organic Green & Black’s. ALWAYS)
3 tbsp apple sauce (or half a banana mashed should do)
2 egg whites
2 tbsp almond milk
1/2 tsp baking powder
1 tsp agave (OPTIONAL. I didn’t add this as the sauce is sweet enough for me. But perhaps you might want this if you like things sweet or are going sauceless/with a savoury topping like cream or peanutbutter)

Mix all ingredients in your mug
Pop your mug of delight in to the microwave
My mug cake took 1min 50secs in my microwave. Check yours at 1m45, but may need up to 2m30secs
Ready: looks moist, the top feels springy touch and a knife inserted in the middle comes out clean

While the mug cake is in microwave make your sauce:

1 tbsp high quality cocoa
1 tbsp agave syrup
1 tsp vanilla
1 tbsp melted coconut oil
2 tsp hot water

Mix these all up
I gave mine 10 seconds in the microwave to warm it up a bit more

Tip your mug cake out on to a small plate/bowl
Pour sauce over mug cake
Take a seat
