One Pot Recipe: Baked Sticky Plum Salmon

12 stems tenderstem broccoli 1 red pepper, thickly sliced

Handful baby chestnut mushrooms (approx 12)

6 babycorn

3 spring onions, halved length ways & cut in thirds

Half a red onion

Handful of mange tout 

1 red chilli, finely sliced

2 wild salmon fillets

For the glaze:

2 tbsps hoisin sauce (sticky plum)

2 tbsps soy sauce 

1 tbsp lemon juice

1/2 tbsp sesame seeds
Salt, pepper, olive oil (or infused oil)

Prep veg, lay in an oven dish and sprinkle with salt, pepper and olive oil (I used chilli infused extra virgin olive oil)

Mix sauce ingredients including sesame seeds

Lay salmon fillets over veg and spoon the sauce over
Bake at 200 degrees Celsius for 20 mins 

Remove fillets and toss veg in juices and sauce in the bottom of the dish

Serve salmon on bed of veg. Could also serve with your choice of noodles or rice etc. Served ours on wholewheat noodles tossed in sesame oil.  

Eat up.
